When you start looking at carrot cake recipes you realise there are thousands of different ways to make cakes out of carrots.
I often make a spicy Mediterranean carrot cake with Olive oil and nuts, but he one I have just been making is a German style Carrot and almond Torte. (this is for a batch of 3 large cakes)
If you look at the ingredients you might spot something different.
The main two ingredients are the carrot and the ground almonds. Then there are a lot of eggs, separated. then there is modest amount of sugar, a little flour, and cinnamon and baking powder. There is no fat, as the fat element comes from the almonds.
This is quite a good example of my approach to cakes. I enjoy cake, but I always try to make sure that sugar is a minor element, and that most of the ingredients are beneficial. The links below take you to sources of information about the nutritional benefits.
The recipe called for a lot of beating of the egg yolks with the sugar, and the egg whites. The whole mix then folded together to make a very light batch of cakes. I am going to glaze the cakes with a simple lemon glaze,
I think a slice will be great with a cup of coffee and the almonds nuts and eggs should mean it will be pretty satisfying too.
